I use wikis for my paid work, my volunteer work, and I have even been quite active with the Norwegian Wikipedia. Most wikis I frequent are based on either DokuWiki (my favourite) or MediaWiki.
DokuWiki is easy to deploy and easy to use, while MediaWiki needs a bit more work to deploy. This means that for most of my projects I go with DokuWiki. For some of these projects I might want to use more than the basic syntax. I might for instance want to draw simple diagrams to explain a network configuration.
This means that I look through the extensive collection of plugins at dokuwiki.org from time to time. And when I do I usually find a couple of plugins that looks interesting, but I don't need it right now.

wrap - Wraps text in columns, divs, boxes, and some other smart things. (I've already used this quite a lot)
